Meatballs with Alfredo Sauce

This super simple recipe has quickly become one of our family favs. This dish is rich and flavorful. Serve over a bed of egg noodles or white rice and add a piece of garlic toast to complete it.

Ingredients:

For the Meatballs:

Don’t have time to make the meatballs from scratch? Use frozen Italian meatballs. They will up the price of your overall meal, but will save time.

  • 1 pound ground beef or ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil for frying

Don’t have time to make this from scratch? Classico is the most comparable if you are in a pinch for time.

For the Alfredo Sauce:

  • 1/2 cup butter, unsalted if preferred- also made this with I can’t believe its not butter
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon garlic powder- if a more garlicky base is preferred, use minced garlic, but cut down to 1/2 tsp
  • 1 teaspoon onion powder
  • 1/2 teaspoon nutmeg (optional)

Instructions:

  1. Prepare the Meatballs:
    • In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, and pepper.
    • Mix the ingredients until well combined, then shape the mixture into meatballs, approximately 1 to 1.5 inches in diameter.
    • Heat olive oil in a skillet over medium heat. Cook the meatballs until browned on all sides and cooked through, about 8-10 minutes. Set aside.
  2. Make the Alfredo Sauce:
    • In a saucepan, melt the butter over medium heat. Once melted, add the heavy cream and bring it to a simmer.
    • Reduce heat to low and gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy.
    • Stir in garlic powder, onion powder, nutmeg (if using), salt, and pepper. Continue to cook and stir until the sauce thickens slightly, about 5 minutes.
  3. Combine Meatballs and Alfredo Sauce:
    • Add the cooked meatballs to the Alfredo sauce, gently stirring to coat them with the sauce.
    • Allow the meatballs to simmer in the sauce for an additional 5 minutes, ensuring they are heated through.
  4. Serve:
    • Serve the meatballs and Alfredo sauce over cooked pasta, rice, or with a side of vegetables. Garnish with additional Parmesan cheese and chopped parsley if desired.
