Chicken Tortilla Soup

This soup is simple to make and is a favorite in our house. We have tried different variations of this recipe over the years and we found we like it without the additional jalapeno or red pepper garnish shown above, which is why it is listed as optional.

Ingredients:

2 Boneless, skinless cooked chicken breasts, shredded- or 1 large can of chicken

1 famliy size Cream of Chicken Soup

1 can of rotel

Shredded Cheddar cheese

Sour Cream

1/2 cup heavy cream- you can substitute 1/2 cup of milk if you want a lower fat content

Green onion

Tortilla strips or Tostido chips

1 small red chili pepper-sliced optional

1 small jalapeno pepper-sliced optional

Cilantro-optional

Stovetop Directions:

In a large pot, heat Cream of chicken soup, Rotel, chicken. stir until well mixed and heated through.

Add heavy cream and reduce heat to simmer.

pour soup into bowl, sprinkle cheddar cheese, a tsp of sour cream and tortilla strips.

Garnish with sliced peppers, green onion, and/or cilantro if desired.
